Apple Hill Cake

One of my favorite places to visit as a kid was Apple Hill in the fall. There were apple goodies of every kind and crafts galore. Besides, the drive was just gorgeous. Here's a favorite recipe inspired by the venue.

Combine:

2 cups sugar

1/2 cup oil

2 eggs

4 cups diced apples

Sift together and add:

2 cups flour

1 tsp. salt

2 tsp. cinnamon

1 tsp. nutmeg

2 tsp. soda

Pour mixture into a greased 9x13 pan and bake for one hour at 350 degrees . Serve warm or cold. Frost or top with whipping cream or ice cream.
