Mince Coffee Circle


Makes a 9-inch ring


Or, try mini versions for holiday gifts.


2 cups sifted flour
3/4 cup sugar
2 1/2 tsp. baking powder
1/2 tsp. salt
1/3 cup shortening
1 slightly beaten egg
1/2 cup milk
3/4 cup moist mincemeat
Strudel
Confectioner's Icing

Sift dry ingredients together. Cut in the shortening till mixture resembles coarse cornmeal. Combine egg, milk, and mincemeat. Add to dry ingredients, mixing just until flour is moistened. Spoon half of batter into a well-greased 9-inch ring mold; then sprinkle on 1/2 of Strudel; then spoon in rest of batter filling the mod 2/3 full. Top with rest of Strudel. Bake for 25 to 30 minutes at 375 degrees. Frost with Cofectioner's Icing while warm but not hot. Decorate with candied cherries and pecans.

Strudel

Combine:
1/2 cup packed brown sugar
1 tsp. cinnamon
1cup finely chopped nuts

Confectioner's Icing

2 Tbsp. butter
1 cup sifted confectioner's sugar
Cream
Dash of salt

Combine butter and sugar and add just enough cream for spreading consistency. Add salt and blend well.
