Apple Crisp


8 cups thinly sliced apples (also good to use reconstituted dried apples from the cannery)
1/4 cup lemon juice
1 cup sugar
1 cup water
Oatmeal Topping

Mix apples with lemon juice and sugar. Pour into a greased 9x13 inch pan. Pour water over fruit. Put on Oatmeal Topping. Bake for 50 minutes at 375 degrees.

Oatmeal Topping

1 1/2 cups flour
1 1/2 cups packed brown sugar
2 1/2 cups oatmeal
1/4 cup nonfat dry milk
1 1/2 tsp. cinnamon
1/2 tsp. ginger
1 cup margarine, (cold)
1 cup nuts (optional)

Mix ingredients, except for margarine and nuts, in bowl. Cut in margarine until the mixture forms large crumbs. Stir in 1 cup of nuts, if desired.


Here's another version, from the Land O Lakes butter wrapper. I love the addition of dried apricots to the filling!


Topping
1/4 cup uncooked quick-cooking oats


1/4 cup whole wheat flour


1/4 cup firmly packed brown sugar


1/2 teaspoon ground cinnamon


1/8 teaspoon salt


1/4 cup cold stick Land O Lakes® Light Butter, cut into chunks


Filling
1/3 cup firmly packed brown sugar


1/4 cup chopped dried apricots


1 tablespoon whole wheat flour


1 teaspoon freshly grated orange zest


1/2 teaspoon ground cinnamon


1/8 teaspoon salt


4 to 5 (6 cups) apples, peeled, cored, cut into chunks ( I used reconstituted dried apples from storage.)


Directions


Heat oven to 350°F. Spray 8-inch square or 2-quart glass baking dish with no-stick cooking spray; set aside.

Combine all topping ingredients except light butter in medium bowl; cut in light butter with pastry blender or fork until mixture resembles coarse crumbs.

Place all filling ingredients except apples in large bowl; mix well. Add apples; toss to coat evenly. Spoon apple mixture into baking dish; sprinkle evenly with topping. Bake for 40 to 50 minutes or until apples are tender and topping is lightly browned.

Serve warm or at room temperature.
